1 piece Egg, egg yolk, fresh

1 teaspoon Mustard

150 ml Oil, olive

1 teaspoon Juice, lemon

1 pinch Salt, table

Peel and wash the garlic. Crush it using a garlic press and mix it well with salt in a bowl. Add the egg yolk and mustard powder, then whisk everything together until a smooth mixture forms. Gradually, while continuously mixing, add the olive oil drop by drop. Once the mixture is smooth and has absorbed all the oil, add the lemon juice and pepper.

Chill the sauce slightly before serving (at least half an hour in the refrigerator) and then serve it in small bowls or drizzle it over the dish.
