Almond Cake with Brandy

However, when it comes to portion sizes, its better not to be too generous, as the cake is very filling due to the large amount of eggs, butter, and almonds.

300 g Nuts, almonds

150 g Sugar, white

5 pieces Egg, fresh

2 spoons Alcohol, Rum

250 g Butter, unsalted

1 handful Nuts, almonds, blanched

Preheat the oven to 180 degrees Celsius. In a small cup, slowly melt the butter over low heat. Remove the cup from the heat and let the butter cool slightly. Grease a springform pan (24 cm in diameter) lightly with butter, then line the bottom and sides with parchment paper.

In one bowl, mix the ground almonds and sugar. In another bowl, use a hand whisk to beat the eggs and brandy well, then mix in the melted butter. Pour the wet ingredients into the bowl with the dry ingredients. Use a spatula or spoon to mix well until the ingredients come together and form a uniform batter. Pour the batter into the prepared pan. Sprinkle almond flakes on top. Place the pan in the preheated oven for 40 to 50 minutes. The cake is done when a toothpick inserted into the center comes out clean.

Remove the baked cake from the oven and let it cool in the pan for a few minutes, then transfer it to a wire rack. Serve warm or cold with whipped cream or a scoop of ice cream. A cup of hot beverage pairs excellently with the cake.
