Almond Cake with Plums
As summer slowly transitions into autumn, its time for delicious plum desserts. A quickly prepared almond cake with plums is an excellent choice, as it is very juicy and tasty, and it is served with flavored whipped cream and a cup of warm or cold beverage.

Steps

Preheat the oven to 160 degrees Celsius. Lightly grease a round cake pan with a removable rim (23 cm in diameter) with butter. Wash the plums and drain them well.

In a large bowl with an electric mixer set to medium speed, cream the softened butter cut into pieces and 150 g of sugar until smooth. Then, first mix in the ground almonds, followed by the eggs, which are added gradually (one at a time). Next, mix in the grated orange zest, almond extract, salt, and baking powder, and finally the sifted flour.

Pour the batter into the prepared pan and spread it evenly with the back of a spoon or spatula, smoothing the top nicely. Halve and pit the plums. Cut them into slices and arrange them over the batter. Sprinkle the cake evenly with the remaining sugar. Bake in the preheated oven for about 40 minutes.

Remove the baked cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack and cool to room temperature.

While the cake is cooling, prepare the flavored whipped cream. Pour the sweet cream into a bowl. Add powdered sugar and ground cardamom and whip with an electric mixer or a hand whisk until soft peaks form.

Serve the cooled cake on a nice plate or platter. Cut into pieces of any size and serve with the whipped cream.
