Almond-Chocolate Macarons
To prepare almond macarons, you dont need flour, just four ingredients: egg whites, sugar, almonds, and cocoa powder.

170 g Sugar, white

6 spoon Cocoa, powdered, unsweetened

200 g Nuts, almonds, blanched

Steps

Preheat the oven to 160 degrees Celsius. Line a low baking tray with parchment paper.

Using an electric mixer, first beat the egg whites until they are half whipped, then gradually add sugar (spoon by spoon) while continuing to beat until you get a stiff meringue. First, sift the cocoa powder into the meringue and mix, then add the ground almonds. Mix until you get a thick and sticky batter.

Use a spoon to place dollops of batter onto the baking tray and gently flatten them with the back of the spoon. Dip the spoon in cold water occasionally to prevent the batter from sticking. Make sure there is enough space between the dollops as the macarons will spread slightly during baking. Decorate the macarons with almond slices before baking. Bake in the preheated oven for 15 to 20 minutes.

Remove the baked macarons from the oven and let them cool on the tray for a few minutes, then transfer them to a wire rack to cool completely. Once cooled, you can dust the macarons with cocoa powder before serving.
