Almond Cookies
A recipe we borrowed from Mexican cuisine: prepare delicious almond cookies that will melt in your mouth.

Ingredients

115 g Wheat flour, white, multi-purpose

175 g Powdered sugar

1 pinch Salt, table

50 g Nuts, almonds

0.5 teaspoons Vanilla, extract, natural

115 g Butter, unsalted
for sprinkling

Steps

Preheat the oven to 180 degrees Celsius. In a large bowl, combine almonds, flour, powdered sugar, and a pinch of salt. Mix the ingredients well, then add vanilla extract.

Use your fingers to mix the butter into the mixture and knead it into a dough. On a floured work surface, roll it out to about 3 cm thick and use a larger round cutter to cut out approximately 23 larger round cookies.

Line a baking tray with parchment paper, arrange the cookies on it with at least 2 cm of space between them, then place the tray in the oven. Bake the cookies for about 30 minutes until they are lightly browned.

Once the cookies are baked, let them cool on a wire rack (at least half an hour), then dust them with powdered sugar and serve.

Advice
Almonds can be replaced with walnuts, peanuts, or pecans, and you can also add spices of your choice (e.g., cinnamon, cardamom,…). Take the butter out of the refrigerator at least half an hour before use.
