Steps

In an electric blender, combine honey, ground almonds, soaked buckwheat groats, dates, and raisins, and mix everything into a smooth paste. Using two spoons, shape the mixture into small balls and roll them in ground almonds.

Pit the apricots and place them in a tall and narrow container. Squeeze the juice from a lemon. Pour the lemon juice over the apricots, add a little honey, and blend everything with an immersion blender into a smooth puree.

On a plate, first spoon a little apricot puree. Add the almond balls and sprinkle them with almond flakes. Serve the prepared dessert.
