Steps

Preheat the oven to 200 °C.

In a bowl, mix the almonds, cornstarch, and vanilla sugar. Beat the egg whites until half stiff, then gradually add the sugar while continuing to beat. Once the meringue is very stiff, gently fold in the almond mixture and mix everything lightly.

Cover the baking tray with parchment paper, then use a wet spoon to place the kisses on the paper. Brush them with water, sprinkle with sugar, and bake in the preheated oven for 12 to 15 minutes.

Remove the baked kisses from the tray along with the parchment paper. Place them on a wet board or a damp cloth to moisten the paper, making it easier to peel the kisses off the paper.

Advice
The bowl in which you beat the egg whites should be completely clean and dry. Instead of pre-ground almonds, you can use whole almonds and grind them yourself. You can make powdered sugar at home by finely grinding granulated sugar in an electric mixer. Keep the egg whites at room temperature for a few hours before beating them. Adding a pinch of salt to the egg whites will help them whip up nicely.
