Almond Panna Cotta with Stewed Apricots

Ingredients

10 pieces Apricot, raw

240 ml Alcohol, Wine, White

120 ml Water

1 piece Spices, cinnamon, ground

80 g Honey
Panna cotta

35 g Gelatin powder, unsweetened

375 ml Soy milk

375 ml Sweet cream

80 g Sugar, white

2 teaspoons Juice, orange

Place the gelatin sheets in a bowl, pour cold water over them, and let them soak for 5 minutes to soften.

Pour almond milk and cream into a pot. Add sugar and slowly bring the mixture to a boil over medium heat. Remove from heat and stir in the well-squeezed softened gelatin. Mix in the orange blossom water if using.

Prepare six 125 ml glasses and fill them with the liquid mixture. Let it cool to room temperature, then refrigerate the glasses for two to three hours (or more) until the panna cotta is completely set.

About 30 minutes before serving the dessert, prepare the stewed apricots. Wash the fruits, cut them in half, and remove the pits. In a larger pot, add lemon juice, honey, wine, water, and a cinnamon stick. Bring the mixture to a boil, then add the apricots, reduce the heat, and simmer until the apricot halves soften (about 5 to 10 minutes).

Remove the apricots from the pot and set them aside on a plate. Increase the heat and boil the liquid until about half of it has evaporated, and the remaining liquid thickens into a syrup-like consistency. Let the apricot syrup cool slightly.

Carefully unmold the set panna cotta onto a plate, garnish with the stewed apricots and apricot syrup, and serve the prepared dessert immediately.
