Almond Semolina Soup
An excellent and fresh creamy soup made simply and quickly. It will pair well before a hearty meal, as it will warm you up pleasantly.

Ingredients

60 g Nuts, almonds, roasted, unsalted

4 spoon Semolina

20 g Butter, unsalted

750 ml Soup base, chicken, cube

3 pieces Egg, egg yolk, fresh

125 ml Sweet cream

2 pinch Salt, table

1 pinch Spices, pepper, black

1 bouquet Thyme, raw

In a heated pot, add the almonds and season them with a pinch of salt. Slowly, spoon by spoon, add the semolina while stirring constantly. Quickly sauté everything and then add the butter. Cook over moderate heat, stirring until the butter melts and combines with the almonds and semolina. Gradually pour the vegetable stock into the pot. Bring the soup to a gentle boil and cook for another 10 minutes, stirring continuously.

In a bowl, mix together the cream, egg yolks, salt, and pepper. Take a few tablespoons of the soup from the pot and mix it with the egg yolk mixture. Remove the pot from the heat and slowly whisk the egg mixture into the soup to thicken it. Wash and chop the chives. Divide the soup into 4 bowls and garnish with the chopped chives.
