Alsatian Pizza/Bread (Flammkuchen)
A very thin pizza or bread, spread with crème fraîche and topped with onions and bacon, is a typical Alsatian snack to enjoy with beer or wine. It can also be served as a standalone meal.

Ingredients
Dough

100 ml Water

10 g Yeast, dry

1 pinch Sugar, white

200 g Wheat flour, white, multi-purpose

0.5 teaspoons Salt, table

3 spoons Oil, vegetable oil, canola

150 g Meat, pork, smoked bacon

3 pieces Onion, raw

200 ml Sour cream

1 pod Garlic, fresh

Steps

Dissolve the yeast and sugar in lukewarm water. Let it sit for 5 minutes to allow the yeast to rise slightly.

Place the flour in a bowl and make a well in the center. Pour the risen yeast mixture into the well. Add the oil and mix the ingredients until you get a wet and sticky dough. Transfer the dough to a floured work surface and knead until it becomes completely smooth, soft, and pliable. Place the kneaded dough in a bowl, cover with a cloth, and let it rise in a warm place for 40 minutes.

Peel the onion and slice it thinly. Cut the bacon into cubes and quickly fry them in a heated pan. Add the sliced onion and cook, stirring occasionally, until the onion turns a beautiful golden brown. Mix the sour cream with salt and pressed garlic.

Preheat the oven to 210 degrees Celsius. Line a baking tray with parchment paper. Roll out the risen dough thinly and place it on the baking tray. Spread it with the sour cream mixture and top it with the fried onions and bacon. Bake the pizza or bread in the preheated oven for about 10 minutes. It is ready when the bottom and edges turn slightly brown.
