Wash the meat and dry it with a paper towel or a clean kitchen cloth. Pour buttermilk into a large bowl and place the chicken pieces in it. Turn the meat several times to ensure it is soaked on all sides, then cover the bowl and refrigerate for 3 hours. Turn the meat several times while it rests.

In a large bowl, mix flour with salt, paprika, pepper, garlic powder, and nutmeg.

Remove the chicken pieces from the buttermilk and shake off excess liquid. Coat the meat pieces on all sides with the seasoned flour. Heat a deep pan and add about 2 centimeters of oil, heating it well.

Fry the chicken pieces in the hot oil for 15 minutes. Ensure there is enough space for each piece in the pan, so fry the chicken in batches. Turn the pieces evenly to achieve a golden brown color. Place the cooked meat on paper towels to absorb excess fat. Arrange the fried chicken pieces on plates and serve warm.

Advice
If the pan is well heated, you can test it by cutting a cube of bread and tossing it into the hot oil. If the cube turns golden in one minute, the oil is hot enough. Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. Instead of buttermilk, you can use liquid yogurt or milk with a teaspoon of lemon juice added.
