American-Style Ribs

Thoroughly wash the parsley, shake it dry, and finely chop it. Peel the onion and garlic, and finely chop them. Wash the tomatoes and use a peeling knife to remove the stem, then make a cross-shaped cut on the rounded side. Place a large pot on the stove and bring water to a boil. Dip the tomatoes in the boiling water for 8–15 seconds. Then cool them under cold running water and peel them.

Cut the tomatoes crosswise and squeeze out the seeds and liquid. Scrape out the remaining seeds with the tip of a knife. Then, using a large kitchen knife, halve them, slice them, and chop them into thick pieces.

Thoroughly wash the ribs and dry them with kitchen towels, then separate them into individual ribs. Generously rub them with salt and pepper. Place a large pan on the stove and heat it up, then add oil. Quickly sear the ribs in the oil for about 10 minutes, turning them once.

Once the ribs are seared, arrange them on a baking tray lined with baking paper. Reheat the same pan used for the ribs, then quickly sauté the onion until soft. Add the chopped tomatoes, minced garlic, sugar, vinegar, and Worcestershire sauce. Mix all the ingredients well, and season the sauce with green seeds. Season the sauce with salt and pepper to taste. Cook the sauce slowly for about 30 minutes, stirring occasionally, until it thickens.

Preheat the oven to 220 degrees Celsius. Pour the prepared sauce over the ribs on the baking tray. Bake them in the preheated oven for about 30 minutes, then reduce the temperature to 180 °C and bake for an additional 10 minutes.

Remove the ribs from the oven, serve them on plates, and sprinkle with fresh parsley. Serve the prepared dish to your guests.
