Ingredients

500 g Fish, anchovies, fresh

100 g Wheat flour, white, multi-purpose

1 teaspoon Salt, table

1 piece Lemon, fresh, without shell

Steps

Rinse the anchovies under running water and dry them well with a kitchen towel. Place them in a bowl, sprinkle with flour, and shake the bowl well so that the flour evenly coats the fish.

Heat oil in a larger pan. Add some anchovies and fry them. Be careful not to overcrowd the pan. Fry for about 3 minutes, then remove them with a slotted spoon and drain on paper towels. Repeat the process until all the anchovies are fried.

Season with salt before serving and serve with lemon wedges.

Advice
Anchovies can also be coated with cornmeal to make them even crispier. Fry in a large amount of fat. The food must float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon.
