Anchovies in Marinade
Anchovies in marinade are an affordable and healthy meal, particularly characteristic of Slovenian Istria and coastal towns. They are usually served as a cold appetizer, but with a piece of homemade bread, they become a satisfying dish. You can order them in local taverns or make them at home, as the preparation is quick and simple. You can also prepare them in advance, as the longer they marinate, the better they taste.

Ingredients

500 g Fish, anchovies, fresh

100 g Flour, Wheat, bread flour

1 dl Oil, olive

2 piece Onion, raw

4 pods Garlic, fresh

2 dl Alcohol, Wine, White

2 dl Vinegar, apple

1 piece Lemon, fresh, without shell

Clean the anchovies, coat them in flour, and quickly fry them in heated olive oil.

Season the fried anchovies with salt and arrange them in layers in a small baking dish or similar container.

Peel the onion and slice it into thin pieces. Slowly sauté it in the remaining olive oil until it becomes translucent. Season with salt. Add crushed garlic, and once it becomes fragrant, pour in wine and apple vinegar. Slice the lemon into rounds and add it to the mixture along with whole peppercorns, a sprig of rosemary, and a bay leaf. Simmer and adjust the seasoning with salt if needed.

Pour the hot marinade over the fried anchovies and let everything cool down. Once cooled, refrigerate the dish, where it can wait for a couple of days before serving. If you're impatient, let the anchovies marinate at least overnight so the flavors can meld.

Serve the anchovies on a plate along with the onions they were marinated in. Drizzle everything with olive oil, and optionally with balsamic vinegar, and serve with a piece of good homemade bread.
