Anchovies in Tomato Sauce

Ingredients

1 kg Fish, anchovies, fresh

4 spoon Oil, olive

4 pods Garlic, fresh

1 piece Onion, raw

0.5 teaspoons Salt, table

0.5 dl Water

1 can Tomato sauce, without salt

1 spoon Tomato, concentrate

1 spoon Butter, unsalted
Steps

Rinse the anchovies under running water and dry them with paper towels. Pour olive oil into a larger pan and heat it well, then place the anchovies in the pan. Fry the anchovies on both sides until they get a nice golden color. Transfer them to a paper towel and let the excess fat drain off.

Peel one onion and a few cloves of garlic and chop them finely. In the pan where the anchovies were fried, add the onion and sauté it while stirring until it softens. Then add the garlic and salt, mix everything well, and pour in half a deciliter of water. Use a wooden spoon to scrape the bottom to remove any residue left from frying the anchovies. Add the tomatoes and crush them well with the spoon. Add a tablespoon of tomato paste and butter and mix everything well. Let the sauce cook over moderate heat until it thickens. A few minutes before the end of cooking, place the anchovies back into the sauce.

Transfer the anchovies to serving plates and pour the sauce over them. Decorate the plates with fresh vegetables.

Advice
Anchovies can also be drizzled with lemon juice. Instead of water, you can add wine to the sauce. The flavor of the sauce can be enhanced by adding fresh herbs (e.g., rosemary). Anchovies can be lightly salted before frying. Wash, clean, and dry the vegetables for decorating the plates well. Then cut them into any shapes you like.
