Anchovies with Rice

Ingredients

1 kg Fish, anchovies, fresh

3 cups Rice, white, long grain

3 pieces Bell pepper, red, fresh

3 pieces Bell pepper, yellow, fresh

2 teaspoons Salt, table

1 spoon Butter, unsalted

2 spoons Oil, olive
Steps

Before cooking, rinse the rice. Wash it under running water until the water runs clear. Once the water is clear, drain the rice well. Transfer the rice to a pot, add water, salt, and partially cook it. Once partially cooked, drain the rice.

Grease a deep baking dish well with butter. Wash the peppers, remove the seeds, and chop them into cubes. Mix the peppers and rice together and transfer them to the prepared baking dish. Preheat the oven to 220 degrees Celsius.

Wash the fish and dry them with paper towels, then rub them with salt. Arrange the fish over the rice and peppers, and drizzle everything with olive oil. Bake in the preheated oven for 25 minutes, then serve directly from the baking dish.

Advice
