Ingredients

Steps

Thoroughly wash the lemon, dry it, and grate about one tablespoon of lemon zest. Wash the parsley, shake it dry, and finely chop it. Peel the onion and garlic, and finely chop the onion. First, thoroughly wash the sardines under running water, remove the head and backbone, then open them and halve them with a sharp knife.

Prepare a small rectangular bowl with a higher edge and layer the first layer of fish fillets in it. Sprinkle them with grated lemon zest, parsley, and onion, and season with salt to taste. Pour one tablespoon of olive oil over it and cover with the second layer of fillets. Sprinkle this layer with whole garlic cloves and peppercorns. Then pour the remaining olive oil, vinegar, and wine over everything. Cover the bowl and place it in the refrigerator for at least 3 hours.

Meanwhile, prepare the tomatoes by thoroughly washing them. Place a medium-sized pot on the stove, fill it with water, and wait for it to boil. Make a very light cross-shaped cut on the top of the tomatoes with a sharp knife, then immerse them in the boiling water. Wait for about a minute for the skin to loosen, then remove the tomatoes from the water with a slotted spoon. Carefully peel the tomatoes and store them in the refrigerator.

Just before serving the marinated sardines, take them out of the bowl and drain them. Arrange the tomatoes on a serving plate or dish. Place a fillet of marinated sardine on top of each tomato. The prepared snack can also be served in serving spoons.

Advice
Since the fish need to be completely covered with liquid, you may need to increase the amount of vinegar and wine. We advise you to strictly adhere to the 2:1 ratio, which means 2 units of vinegar and 1 unit of wine. However, in this case, it is better to add a bit more vinegar and less wine, otherwise the marinade will be too sour. It is good to place the bowl on the bottom shelf of the refrigerator where the temperature is not too low. It is best to use an organic lemon, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
