Apple and Blackberry Cake
It is said that blackberries are the healthiest fruit among all berries. To make the most of their medicinal properties, it is best to eat them as soon as they are picked. However, when we have had our fill, we can also prepare this excellent fruit cake, which pairs perfectly with a cup of warm drink.

Steps

Preheat the oven to 180 degrees Celsius. Grease a deep rectangular baking dish (size 9 x 20 x 13 cm) well with butter (or line it with baking paper).

Cut the butter into small cubes. In a bowl, mix the flour and sugar. Sprinkle the butter cubes over the mixture. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles breadcrumbs. Set aside about 5 tablespoons of the butter crumbs in a smaller bowl and mix them with ground cinnamon.

Wash the apple, grate it, and mix it with the beaten egg. In a large bowl with the butter crumbs, first mix in the baking powder, then add the mixture of apple and eggs. Quickly mix the ingredients until you get a uniform batter that slowly drips off the spoon, then stop mixing.

Gently and slowly fold in 2/3 of the fresh blackberries into the prepared batter. Be careful not to damage them, as they quickly release juice that can color the batter. Then pour the batter into the prepared baking dish. Use a spoon or spatula to spread it evenly and smooth the top. Sprinkle the reserved blackberries over the batter, and finally, add the cinnamon butter crumbs. Bake the cake in the preheated oven for 75 to 80 minutes. If the cake turns dark brown around the edges after 50 minutes of baking, cover the dish with aluminum foil to prevent the cake from over-browning or burning on top or around the edges.

The cake is done when it turns golden brown on top, and a toothpick inserted into the cake comes out clean. Let the baked cake cool in the dish for 30 minutes, then transfer it to a wire rack and let it cool completely. Once cooled, slice it and serve with a cup of warm drink.
