Apple and Pear Crostata with Almonds

Steps

First, prepare the dough. Sift the flour into a bowl and mix it with sugar and salt. Add the diced butter to the mixture. Quickly rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add the egg yolk and cold water, and knead everything together with cold hands to form a smooth dough. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 200 degrees Celsius. Wash the fruit under running water and dry it well with paper towels. Cut it in half, remove the stems and cores. Slice the halves and toss them in a bowl, drizzle with lemon juice, and mix well. In a separate bowl, use an electric mixer to cream the softened butter and sugar. First, mix in the egg, then add the ground almonds, flour, cinnamon, and brandy.

Lightly flour the work surface and roll out the dough into a 35 cm diameter circle. Spread most of the almond mixture over the dough (reserve 1-2 tablespoons) and leave about 3 cm of edge on all sides. Arrange the fruit slices over the almond mixture. Fold the ungreased edge of the dough towards the center, partially covering the fruit. Sprinkle the remaining almond mixture over the fruit and brush the dough with beaten egg yolk. Carefully transfer the crostata to a baking sheet lined with parchment paper. Bake in the preheated oven for 30 to 40 minutes.

Remove the baked crostata from the oven and let it cool slightly. Serve warm with cold whipped cream or a scoop of ice cream, or enjoy it cold with a cup of warm beverage.
