Caramelized apples

1.5 piece Gelatin powder, unsweetened

10 g Alcohol, Rum

Steps

First, prepare the cream, which needs to chill for at least 3 hours. It's best to prepare it a day in advance. Soak the gelatin in cold water and let it sit for 10 minutes to soften. Pour hot cream over the pieces of white chocolate. Wait for the chocolate to melt, then add the drained gelatin, vanilla sugar, rum, and a bit of cinnamon. Mix everything well with a hand mixer.

Once the ingredients combine into a smooth and uniform cream, pour in the cold liquid cream. Mix the cream well again, then cover it with plastic wrap touching the surface and place it in the refrigerator for at least 3 hours (or even better, overnight). Before piping the cream into the baskets, whip it with a hand mixer to make it fluffy and lighter.

For the caramelized apples, first prepare the butter caramel. Sprinkle sugar into a pan and heat it until it melts and turns golden brown. Add butter and peeled apples cut into small pieces. Fry everything well, then pour in water so that all the caramel melts. Be careful not to burn yourself! Cook the apples for about 5 minutes, seasoning them with cinnamon while cooking.

Mix the starch smoothly with two tablespoons of cold water. Stir the mixture into the apples to thicken the caramel. Let the filling cool slightly, then distribute it into the shortcrust pastry baskets. Fill each basket to the top. Store the baskets in the refrigerator for 30 minutes to let the apples cool.

Transfer the whipped cream into a pastry bag fitted with any desired tip. Pipe the cream onto the cooled apples. Decorate the baskets with caramelized hazelnuts, then serve them on a beautiful plate or platter.
