Apple Cake with Honey
Prepare this cake when old friends, whom you havent seen in a long time, come over for an afternoon chat with a cup of tea or coffee. Before serving, dust it with powdered sugar, or if you want the honey flavor to stand out more, brush it with warmed honey. Success is guaranteed in both cases.

Steps

Preheat the oven to 175 degrees Celsius. Grease a round springform pan (23 cm in diameter) with butter and line the bottom with parchment paper. Sift the flour and baking powder into a bowl. Mix the sifted ingredients well.

Wash the apples, peel them, cut them in half, and remove the cores and seeds. Place the halves on a cutting board with the cut side facing down. Make several parallel cuts in each half with a sharp knife, being careful not to cut all the way through (the bottom should remain intact). Place the sliced halves in a bowl, pour lemon juice over them, sprinkle with sugar, and gently mix.

In a bowl, using an electric mixer, cream the butter and sugar. Gradually mix in the honey, vanilla extract, and egg yolks. Reduce the mixer speed and add the dry ingredients in two parts.

Beat the egg whites with a pinch of salt until stiff peaks form. Gently and slowly fold the egg whites into the butter mixture in two or three parts using a spatula or spoon.

Pour the batter into the prepared pan and spread it evenly with a spatula, smoothing the top. Arrange the sliced apple halves on top of the batter (cut side up). Pour the juice that has collected in the bowl over the apples. Bake the cake in the preheated oven for 35 to 40 minutes. The cake is done when it turns golden brown, and a toothpick inserted into the center comes out clean.

Let the baked cake cool in the pan for 5 minutes, then carefully remove the ring. Place the cake on a wire rack and let it cool completely. Before serving, dust the cooled cake with powdered sugar or brush it with warmed honey. Serve it on a nice plate or platter, cut into slices, and enjoy with a cup of warm beverage.
