Apple Chutney with Raisins
Chutney originates from Indian cuisine. The key to its preparation is the combination of various ingredients (fruits and vegetables) and spices. The result is a sweet, sour, and optionally spicy sauce that is an excellent accompaniment to cooked or roasted meat, especially pork.

Ingredients

1.5 kg Apples, rose

2 piece Onion, raw

500 g Raisins, golden

2 teaspoons Mustard

2 teaspoons Spices, ginger, ground

1 teaspoon Salt, table

750 g Sugar, brown

700 ml Vinegar, apple
Steps

Wash the apples under running water, peel them, and remove the cores. Cut them into small pieces and place them in a large pot. Peel the onion and finely chop it. Add it to the pot with the apples along with raisins, mustard seeds, sugar, ground ginger, salt, and apple vinegar. Mix the ingredients well with a cooking spoon.

Place the pot on the stove and slowly bring the contents to a boil over medium heat. Simmer uncovered for 30 to 40 minutes, or until the mixture thickens slightly. Stir the ingredients in the pot several times during cooking.

Once the chutney is ready, remove the pot from the heat and let the contents cool. Transfer the cooled chutney into clean jars, seal them tightly, and store them in a cool, dark place.

Advice
The chutney can be enriched with the addition of the following spices: cinnamon, cloves, star anise, allspice, etc. Ground ginger can be replaced with freshly grated ginger if desired.
