Apple Cinnamon Budino
A delicious autumn version of the popular Italian dessert. Its base is a rich cream, similar to pudding, topped with a ‘butterscotch’ sauce made from reduced apple cider, butter, and cinnamon.

Steps

In a bowl, mix cornstarch, salt, and two tablespoons of sugar. Add the egg yolk and mix well.

Pour cream and milk into a saucepan, add the remaining sugar, a cinnamon stick, and vanilla extract. Heat while stirring until it boils, then remove from heat.

Slowly pour the milk mixture into the egg yolks in a thin stream while continuously whisking with a hand whisk to prevent curdling. Once half of the milk mixture is incorporated, pour the contents of the bowl back into the saucepan. Heat over medium heat while stirring until it boils.

Remove from heat and stir in the butter. Strain the cream and remove the cinnamon stick. Divide it into four glasses, smooth with a spoon, and cover with plastic wrap to prevent a skin from forming. Let it set for at least 2 hours.

Pour apple cider into a saucepan and reduce it to one-quarter over medium heat. Add butter, cut into pieces. Stir until the fat melts, then add sugar and stir again until it dissolves.

When the sauce starts to bubble, pour in the cream and cook for another minute. Remove from heat and stir in cinnamon, vanilla extract, and salt.

Pour the sauce into a small bowl and let it cool to room temperature, then drizzle it over the chilled cream in the glasses.

Just before serving, decorate the dessert with whipped cream and a slice of apple.
