Meringue: Beat egg whites and sugar over steam until all the sugar is dissolved. Transfer to a mixer and continue beating until you get a stiff meringue. Mix in lime juice.

Orange Foam: Juice the oranges. Add proespumo to the juice, mix, strain, and pour into a siphon.

Star Anise Balls: Cook star anise. Strain and cool the strained liquid. Add agar and bring to a boil. Use a syringe to extract the liquid, squeezing it into cold oil to create "star anise caviar."

Raisins: Cook raisins in white wine. Cook them until they swell.

Caramel: Caramelize sugar. Pour in apple juice, reduce, add cream, reduce again, and cool.

Apple Mousse: Bake apples in the caramel and let them cool. Add the baked apples and soaked gelatin to the curd and mascarpone. Lighten the mixture with whipped cream.

Bake the kadaif in the oven (like crumble). Shape the caramel ice cream into scoops. Arrange all the components beautifully on a plate and serve the prepared dessert.
