Apple Pastry with Meringue and Crumble
This pastry may not be among the quickest desserts to prepare, but it is not so demanding that even those less experienced in baking couldnt attempt it. The most work will be in preparing the delicate dough and layering the ingredients in the baking dish. This pastry is suitable for picnics and parties, and it also makes a great afternoon treat to enjoy with a cup of your favorite drink.

Ingredients
Dough

400 g Flour, Wheat, bread flour

50 g Powdered sugar

In a bowl, sift together the flour, powdered sugar, and baking powder. Add salt, mix, and sprinkle the cold butter, cut into cubes, on top. Use your fingertips to rub the butter into the dry ingredients, lifting the mixture to make it airy and crumbly. Add the egg yolks and quickly knead everything together with cold hands to form a dough. Divide the dough into two parts. Store about 1/3 of the dough in the freezer and refrigerate the remaining 2/3 for 60 minutes.

Wash, peel, and grate the apples. Place them in a suitable pot and set it on the stove. Add sugar, lemon juice, and cinnamon, and simmer the apples over low heat, stirring occasionally, until they soften and the liquid evaporates. Remove from heat and let cool.

Grease a deep rectangular baking dish (25 x 30 cm) with butter and dust it with flour. Preheat the oven to 180°C. Take the dough from the refrigerator and roll it out on a lightly floured surface to the size of the baking dish. Transfer it to the dish using a rolling pin and gently press it into the bottom with your fingers. Prick it several times with a fork, then bake it in the preheated oven for about 10 minutes.

While the dough is baking, prepare the meringue. Add a pinch of salt to the egg whites and beat them. Gradually add sugar while beating. Continue beating until stiff peaks form, then mix in the lemon juice and sifted cornstarch.

Remove the baking dish with the dough from the oven. Spread the apple filling over it, mixing in the coarsely chopped walnuts. Spread the meringue evenly over the apple filling. Grate the frozen dough over the top. Bake the pastry in the preheated oven for about 25 minutes.

Remove the apple pastry from the oven and let it cool. Once cooled, dust it with powdered sugar or cinnamon, cut into pieces, and serve.
