Sift the flour into a bowl and mix it with powdered sugar and salt. Add the diced butter to the mixture. Quickly and lightly rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Slowly pour in cold water and knead everything together with cold hands into a smooth dough. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Grease a round pie dish (24 cm in diameter) well with butter. Roll out the dough on a floured surface to a thickness of 0.5 cm and line the greased dish with it. Gently press the dough with your fingers against the bottom and sides of the dish. Use a rolling pin to firmly press over the edge of the dish to trim off excess dough and create a neat edge. Refrigerate the dish with the dough for 30 minutes.

Preheat the oven to 180 degrees Celsius. Wash the apples and cut them into quarters. Remove the stems and cores, then slice the quarters into approximately 0.5 cm thick slices. Toss the slices in a bowl, pour over lemon juice, and mix well. Take the dish with the dough out of the refrigerator and prick the dough in several places with a fork. Spread apricot marmalade over the dough and arrange the apple slices on top. Sprinkle the apples with sugar and cinnamon, and dot with pieces of butter. Bake the pie in the preheated oven for 30 to 40 minutes, or until the edges of the dough are golden brown and the apple slices are tender.

Remove the baked pie from the oven and let it cool in the dish for about 15 minutes. Then transfer it to a serving plate or platter. Serve warm or cold with a scoop of vanilla ice cream or whipped cream.

Advice
The dough can be enriched by adding an egg yolk, which is mixed into the dough along with the water. The apples can also be peeled. Instead of apricot marmalade, you can use another type of marmalade.
