Apple Pie with Cottage Cheese

Steps

First, prepare the dough. Sift the flour into a bowl and mix it with salt, sifted sugar, and baking powder. Add the cubed butter to the dry ingredients. Use your fingertips to work the fat into the dry ingredients, lifting the mixture to make it airy and crumbly. Add the egg and yolk, and quickly knead the ingredients into a dough. Shape it into a ball, flatten it slightly, and wrap it in plastic wrap. Place it in the refrigerator for at least 60 minutes.

Mash the cottage cheese well with a fork. Mix it with the egg, regular and vanilla sugar, sour cream, and lemon zest.

Peel the apples and cut them into quarters, removing the cores. Then slice them thinly, place them in a bowl, drizzle with lemon juice, and sprinkle with sugar and ground cinnamon. Gently toss the apples to coat the slices evenly.

Grease a round pie dish (26 cm in diameter) with butter and dust it with flour (remove any excess flour). Roll out about 2/3 of the chilled dough on a lightly floured surface into a thin circle. The dough should be enough to cover the bottom and sides of the pie dish. Gently press it into the bottom and sides with your fingers, then prick it with a fork in several places.

Spread the bottom of the dough with marmalade, then spread the cottage cheese filling evenly over the entire surface and smooth it out. Arrange the apples on top of the filling, gently squeezing them if they are very juicy.

Use the remaining dough to make strips or rolls and place them over the apples to create a lattice. Bake the pie in a preheated oven at 180°C for about 40 minutes.
