Steps

In a bowl, mix the flour, baking powder, and sugar. Add the butter cut into cubes. Use your fingertips to rub the butter into the dry ingredients, lifting the mixture to make it airy and crumbly. Make a well in the center and add the egg yolk. Quickly knead the ingredients with cold hands into a dough, shape it into a ball, wrap it in plastic wrap, and refrigerate for 60 minutes.

Mix the butter with sugar, eggs, lukewarm cream, and sour cream. Stir in the ground poppy seeds, flour, baking powder, and salt. Wash the apples, dry them, and cut them into quarters, removing the cores and seeds. Slice the quarters into wedges.

Preheat the oven to 210°C (410°F), grease a smaller square baking dish (20 x 20 cm) with butter. Take the chilled dough and roll it out on a lightly floured surface to the size of the baking dish. Cover the bottom of the dish with the dough, then spread the poppy seed filling over it and arrange the apple wedges on top. Brush the apples with melted butter and drizzle with honey. Bake in the preheated oven for 10 minutes, then reduce the temperature to 160°C (320°F) and bake for another 30 minutes.

Let the pie cool completely, then cut it into slices, serve on a plate or platter, and enjoy.

Advice
The pie can also be prepared in a round baking dish (26 cm in diameter). If the dough doesnt come together, add one or two tablespoons of cold water.
