Apple Pie with Sour Cream

Steps

Sift the flour into a bowl and mix it with sugar and salt. Add the butter pieces to the mixture. Quickly rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Pour in cold water and quickly knead everything together with cold hands into a smooth dough. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Wash the apples, peel them, and cut them into quarters, removing the stems and cores. Slice the quarters into 4 mm thick slices, place them in a bowl, drizzle with lemon juice, and mix.

Preheat the oven to 180 degrees Celsius, set the rack to the middle position, and generously grease a round pie dish (24 cm in diameter) with butter. Roll out the dough on a floured surface, then line the greased dish with it. Gently press it against the bottom and sides with your fingers, then use a rolling pin to firmly press over the edges to remove excess dough and create a nice rim. Place the dish with the dough in the refrigerator.

In a bowl, smoothly mix sour cream, flour, sugar, salt, vanilla extract, and eggs. Gently fold in the apple slices with a spatula, then pour the mixture onto the chilled dough. Bake the pie in the preheated oven for 30 to 40 minutes, or until the apples are tender and the filling and crust are nicely golden brown.

Remove the baked pie from the oven and let it cool in the dish for about 15 minutes. Then transfer it to a serving plate or platter and dust with powdered sugar. Serve warm or cold with a scoop of vanilla ice cream or whipped cream.
