Ingredients

500 g Apple, fresh

60 g Sugar, brown

0.5 teaspoons Spices, cinnamon, ground

500 g Dough, puff

1 piece Egg, fresh

2 spoons Milk, whole milk

Peel, core, and dice the apples into small cubes, then place them in a pot. Add sugar, cinnamon, and lemon juice, and mix everything well.

Cover the pot and place it on the stove. Simmer the apples over low heat for 5 to 10 minutes until they soften. Once softened, remove the pot from the heat and let the apples cool.

Preheat the oven to 200 degrees Celsius and line a baking tray with parchment paper. In a small bowl, beat the egg and mix it with milk. Roll out the puff pastry on a lightly floured surface and cut it into approximately 16 squares. Brush the edges of the squares with the beaten egg, then spoon the apple filling into the center. Fold the squares diagonally to form triangular pockets. Seal the edges with a fork and brush the tops with the beaten egg.

Transfer the prepared pockets to the baking tray and bake in the preheated oven for 20 to 25 minutes. The pockets are done when they turn golden brown on top.

Advice
The easiest way to thaw puff pastry is to leave it wrapped in the refrigerator overnight. If thats not possible, place the sheets of puff pastry on a plate side by side and let them thaw at room temperature for 30–60 minutes.
