Apple Rhubarb Crumble
For the base, you can use any fresh (or frozen) fruit. The key is to cover it with pieces of dough that will bake into a crispy crust. Sounds great, doesnt it?

Steps

Wash and peel the apples. Remove the stems and cores, then cut them into chunks. Clean the rhubarb stalks, peel them, and cut them into smaller pieces. Toss the rhubarb and apple pieces into a large bowl, then add lemon juice, lemon zest, honey, cornstarch, and salt. Gently but thoroughly mix everything together.

Preheat the oven to 190 degrees Celsius and place the rack in the middle position. In a large bowl, sift the flour and mix it with baking powder, sugar, and salt. Sprinkle the butter pieces over the mixture and use your fingertips to crumble it until it resembles coarse crumbs. Add the cream and knead just enough to bring the ingredients together into a dough.

Shape the dough on a well-floured surface into a rectangle approximately 35 x 45 cm in size. Use a floured cookie cutter (or glass) to cut out smaller circles from the dough.

Grease a deep baking dish well with butter. Spread the seasoned fruit evenly in the greased dish. Arrange the dough circles over the fruit. In a small bowl, beat the egg and brush it over the dough circles (using a brush). Finally, sprinkle everything with a mixture of sugar and cinnamon. Bake in the preheated oven for 20 to 25 minutes, or until the top of the dough turns golden brown. If the dough browns too quickly, loosely cover the dish with aluminum foil and continue baking.

Serve the crumble warm with a scoop of ice cream or whipped cream.

Advice
Instead of honey, you can use regular or brown sugar if desired. Its best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in hot water for a few minutes, then wipe it well to remove the wax, which contains toxins.
