Apple Roll with Curd Sauce and Apple Cream
In the first semi-final duel in history, Siniša and Simone competed for a ticket to the grand finale. The judges assigned them an extremely challenging task. They had to create a three-course menu for each judge and for a secret guest, who critically evaluated their dishes. For all twelve exquisite plates, they had only 20 euros at their disposal! Siniša emerged victorious, and below you can read the recipe for his dessert.

Apple cream

100 g Cheese, cottage cheese

Steps

Beat the eggs with sugar until frothy. Gently fold in the walnuts and flour. Spread the sponge cake batter thinly onto a baking tray lined with parchment paper. Bake in a preheated oven at 180 degrees Celsius for about 9 minutes. While still hot, roll the sponge cake along with the parchment paper and let it cool.

In a thick-bottomed pot, add apples, butter, sugar, lemon juice, and cinnamon. Slowly simmer on low heat until the liquid evaporates and the apples start to "roast." Blend the mixture until smooth and let it cool.

Thermally process the egg yolks and sugar over steam - cook them. Add the curd, basil, and lemon zest. Blend the ingredients until smooth.

Unroll the cooled sponge cake and pour the curd sauce over it. Quickly roll it up, this time without the parchment paper, and place it in the fridge to soak.

Serve the cooled roll with apple cream.
