Apple Tart with Marmalade

250 g Wheat flour, white, multi-purpose

100 g Powdered sugar

1 pinch Salt, table

125 g Butter, unsalted

4 pieces Egg, egg yolk, fresh

0.75 teaspoons Spices, cinnamon, ground

200 g Marmalade, orange

2 spoons Alcohol, Rum

First, prepare the shortcrust pastry. Sift the flour into a bowl and mix it with powdered sugar and salt. Add the diced butter to the mixture. Quickly rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add the egg yolks and knead everything together with cold hands into a smooth dough. If the dough is too dry, add one or two tablespoons of cold water. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 60 minutes.

Peel the apples and cut them into quarters. Remove the stems and cores, then slice the quarters into evenly thick slices. Place the apple slices in a bowl, pour lemon juice over them, sprinkle with cinnamon, and mix well.

Line a square or rectangular baking dish with parchment paper (or grease it with butter). Preheat the oven to 180 degrees Celsius. Roll out the chilled dough on a lightly floured surface to the size of the baking dish.

Carefully place the rolled-out dough into the baking dish and gently press it against the bottom and sides of the dish. Prick it with a fork in several places, then arrange the apple slices on top. Layer the slices in rows, making sure they slightly overlap. Bake the tart in the preheated oven for 40 minutes or until the apples are soft and the pastry is golden brown.

Mix the apricot marmalade with rum and heat it gently over moderate heat. While the tart is still warm, generously brush the top with the hot marmalade. Let the tart cool completely, then cut it into pieces of your desired size, serve on plates or a platter, and enjoy.
