Apricot Dumplings

Ingredients

400 g Apricot, raw

1 handful Sugar, white

Steps

Wash the apricots and remove the pits. Instead of the pit, place a sugar cube in each fruit. Bring water to a boil in a pot and add butter. Add a quarter teaspoon of salt to the flour and sift it. Pour it all at once into the boiling water. Stir constantly with a wooden spoon until the dumpling dough separates from the spoon and the pot and becomes shiny. Remove the pot from the heat and let the dough cool slightly. Mix the eggs into the cooled dough.

Shape the lukewarm dough into a roll and cut it into slices, two centimeters thick. Press the slices, wrap one apricot in each, and shape into dumplings. Let the dumplings stand for five minutes to dry.

Bring a large pot of salted water to a boil. Place the apricot dumplings into the boiling water and cook them at low temperature for eight to ten minutes.

Brown the breadcrumbs in melted butter. Remove the dumplings from the water with a slotted spoon, drain them well, and roll them in the browned breadcrumbs. Arrange them on plates and sprinkle with sugar, which can be mixed with ground cinnamon if desired.

Advice
Dumplings can also be prepared with potato, semolina, or breadcrumb dough. Instead of apricots, we can fill them with fresh plums, or in winter with soaked dried plums or figs. Instead of white sugar, we can use cubes of cane sugar, which will add a caramel flavor to the sweetness. In the fruit, we can wrap half a cube of sugar and a walnut kernel.
