90 g Sugar, white

300 ml Water

20 ml Juice, lemon

750 g Apricot, raw

2 piece Egg, egg white, fresh
Steps

Wash the apricots, cut them in half, and remove the pits. In a pot, add sugar, lemon juice, and water. Heat the mixture slowly over low heat until the sugar is completely dissolved. Add the apricots to the mixture. Cook over moderate heat for 15 minutes, allowing the apricots to soften slightly. Remove the pot from the heat and let it cool.

Pass the apricots and syrup through a sieve into a freezer-safe container and place them in the freezer for two hours. Once frozen, transfer the mixture to a larger bowl and whisk it to break up any large ice crystals.

Beat the egg whites into stiff peaks and gently fold them into the apricot ice mixture. Pour the mixture back into the freezer-safe container and return it to the freezer to allow the sorbet to fully set.

Half an hour before serving, place the freezer-safe container in the refrigerator. Scoop the sorbet into balls and serve in glasses or bowls.
