Artichoke Salad with Tomatoes and Mozzarella

Ingredients

1 twig Mint

3 spoons Olives, green, in brine

0.5 kg Tomato, red

3 pieces Bell pepper, red, fresh

2 bags Cheese, mozzarella

1 can Artichoke

1 piece Juice, lime

2 pinch Salt, table

1 teaspoon Spices, oregano, dried

1 teaspoon Spices, rosemary, dried

1 teaspoon Spices, basil, dried

2 teaspoons Oil, olive
Steps

Open a can of artichokes and drain them well. Rinse and dry a sprig of mint, then pluck the leaves. Wash the tomatoes and cut them in half. Wash the peppers, cut them in half, and remove the seeds.

Place a small pan on the stove and heat a tablespoon of oil. Add the halved peppers to the oil and quickly sauté them (no more than 2 minutes). Remove the pan from the heat.

Prepare a large bowl and add the tomatoes, roasted peppers, and artichokes. Also add olives and mozzarella. Cut the lime in half and squeeze the juice from one half, then slice the other half into rounds.

Drizzle the prepared salad with lime juice and oil. Sprinkle oregano, rosemary, and basil on top. Mix all the ingredients well, and garnish the salad with mint leaves and lime rounds. Serve the dish to your guests.
