Ingredients

10 pieces Artichoke

3 pieces Lemon, fresh, without shell

4 spoon Oil, olive

1 pinch Salt, table

Cut the lemons in half and squeeze out the juice. Wash the artichokes, then use a sharp knife to cut off the top and peel them like potatoes, removing all the woody parts until you reach the soft hearts. Place a larger pot with two liters of water on the stove. Add the artichoke hearts to the water.

Cover the pot and cook the artichokes for about half an hour. When the artichokes are ready, remove them from the pot with a slotted spoon and transfer them to a cutting board, where you cut them into quarters. Then place them in a large glass bowl and season with oil, salt, and lemon juice.

Mix the ingredients well and serve the salad to your guests.

Advice
If preparing a larger quantity of salad, it is advisable to prepare a larger bowl with water and lemon juice. Place the artichokes in it during preparation to prevent them from darkening. The salad does not need to be cooled, as warm artichokes are best. You can also serve warm homemade polenta on the side.
