-
2 spoons Soy sauce, shoyu

2 spoons Vinegar, apple
-
4 spoon Oil, vegetable oil, canola
-
pieces Ginger, fresh
-
170 g Pasta, soba noodles
-
0.25 heads Cabbage, red, fresh

Steps
-
Bring a large pot of salted water to a boil. Add the noodles and cook according to the instructions on the package. Drain the cooked noodles, rinse them with cold water, and drain well. Toss them with a little oil to prevent sticking.
-
Rinse the cilantro under running water, shake off excess water, and roughly chop. Clean and wash the vegetables. Slice the red cabbage and carrots into thin strips, and cut the green onions into rings. Combine the sliced vegetables and cooled noodles in a bowl.
-
Peel and finely grate the ginger. In a small bowl, mix vinegar, soy sauce, oil, and grated ginger to make the dressing. Pour the dressing over the ingredients in the bowl. Gently toss everything together to evenly distribute the dressing. Serve the prepared salad in two bowls, sprinkle with sesame seeds and cilantro, and enjoy.

Soba noodles are Japanese noodles made from buckwheat flour (or a mix of buckwheat and wheat flour). Feel free to add sliced bell peppers, chili, cucumber, etc., to the salad as desired.
