Thoroughly wash and dry the mint, then pluck the leaves, which we save for decoration. Rinse the prawns thoroughly under running water. Then, shell the prawns, leaving the last segment and the tail. Pat the shelled prawns dry with paper towels. Beat the egg white in a bowl with salt. Dip the prawns into the prepared mixture. Place them on a plate and lightly sprinkle with cornstarch.

Place a medium-sized pan on the stove and heat the oil. Fry the prawns in the hot oil until golden brown on all sides, which takes about 2 minutes. Remove them from the pan with a slotted spoon and drain on paper towels.

Serve the prepared dish on plates, garnish with mint leaves and a slice of lemon, then offer it to your guests.

Advice
If there is a black thread on the backs of the prawns, make a slight cut along the thread and remove it. Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon handle.
