Asparagus and Bacon Tart
The tart can be a great snack - in this case, we cut it into small pieces. It can also be an excellent appetizer - in this case, we cut it into slightly larger pieces. Without any trouble, we can also enjoy it for lunch or dinner - in this case, we cut it into large pieces and serve it with a big bowl of seasonal salad.

400 g Asparagus, fresh
Steps

Preheat the oven to 200 degrees Celsius. Roll out the puff pastry on a floured work surface into a rectangle measuring 15 x 30 cm. Fold the edges of the rectangle inward to create a decorative border. Place the pastry on a baking tray lined with parchment paper and prick it with a fork in several places. Beat an egg in a small bowl and brush the pastry with it. Bake the pastry in the preheated oven for 15 minutes or until it puffs up and turns golden brown.

While the pastry is baking, prepare the other ingredients. First, wash the asparagus, then cut or snap off the woody ends and discard them. In a bowl, mix mascarpone, ricotta, lemon zest, chopped herbs, parmesan, salt, and freshly ground pepper. Heat oil in a pan and fry the bacon slices until crispy. Remove the fried bacon from the pan and cut it into small pieces.

Take the baking tray with the baked pastry out of the oven and spread the cream made from ricotta, mascarpone, herbs, and parmesan over the pastry. First, sprinkle the bacon pieces over the cream, then arrange the asparagus in a straight row. Brush the asparagus with the fat from the pan, then place the baking tray back in the preheated oven for about 10 minutes.

Take the baked tart out of the oven and cut it into pieces of any size. Serve on plates and enjoy.
