Asparagus Quiche
Flaky crust, juicy filling, and crispy asparagus are the three basic ingredients of this excellent spring quiche. You can enjoy it for a snack, lunch, or dinner.

Dough

200 g Wheat flour, white, multi-purpose

2 pinch Salt, table

Sift the flour into a bowl and mix it with salt. Add the diced butter to the mixture. Quickly rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Pour in cold water and quickly knead everything together with cold hands into a smooth dough. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

While the dough is in the refrigerator, prepare the asparagus. First, wash them, then cut or snap off the woody ends and discard them. Cut the asparagus into smaller pieces. Melt butter in a pan and quickly sauté the chopped asparagus (sauté for only 1 to 2 minutes).

Preheat the oven to 200 degrees Celsius. Lightly grease a pie dish with butter. Roll out the chilled dough on a floured surface to about 0.5 cm thick. Transfer it to the prepared dish and gently press it into the bottom and sides of the dish with your fingers. Use a rolling pin to firmly press over the edge of the dish to trim off excess dough and create a nice edge. Prick the dough in several places with a fork.

In a bowl, whisk together the eggs, egg whites, cream, salt, pepper, and grated cheese with a hand whisk. Stir in the sautéed asparagus. Pour the mixture into the prepared crust.

Bake the quiche in the preheated oven for 35 to 40 minutes, or until the crust and filling are nicely golden brown.

Remove the baked quiche from the oven and let it cool in the dish for about 10 minutes. Then remove it from the dish, place it on a plate or platter, and serve.
