Asparagus Soup with Potatoes
Creamy asparagus soup with potatoes is quick to prepare and has an excellent taste, suitable for both lunch and dinner. Its texture is very creamy and silky due to the addition of potatoes, so adding cream is not necessary.

Steps

Wash the asparagus and snap or cut off the woody parts. Then cut off the tips and set them aside for later, and chop the remaining part into pieces. Peel the onion and garlic and chop them separately, peel the potatoes, wash them, and cut them into small pieces.

Place a pot on the stove and heat two tablespoons of butter or olive oil. Add the onion and sauté it over moderate heat until it becomes translucent and softens slightly. Stir the onion occasionally while sautéing and season with a pinch of salt.

Add the garlic to the pot and sauté it with the onion for a minute until fragrant, then add the chopped asparagus and potatoes, quickly sautéing them together with the other ingredients.

Pour in the broth and season with salt and pepper. Wait for the liquid to come to a boil, then reduce the heat to medium and let the soup simmer covered for 15-20 minutes, until the vegetables soften.

Meanwhile, heat the remaining oil or butter in a pan and sauté the reserved asparagus tips, lightly seasoning them with salt and pepper.

Once the vegetables are soft, blend the soup until smooth using an immersion blender or a regular blender. If desired, strain it through a fine sieve to make it as creamy and smooth as possible. Adjust the seasoning with salt and/or pepper to taste.

Serve the prepared soup in deep bowls or soup cups. Garnish with the sautéed asparagus tips, and optionally add a bit of cream or freshly chopped herbs (dill, parsley, chervil, etc.). Serve the dish immediately.
