Ingredients
Dutch sauce

2 spoons Vinegar, distilled

2 teaspoons Juice, lemon

3 pieces Egg, egg yolk, fresh

140 g Butter, unsalted

600 g Asparagus, fresh
Steps

First, wash the asparagus, then cut or break off the woody lower part and discard it. Divide the asparagus into four bunches and tie each one with kitchen string.

Place all four bunches of asparagus in a tall pot and pour in enough hot water to cover the asparagus about three-quarters of the way. Cover the asparagus with a piece of aluminum foil (shiny side down). Cook over moderate heat for about 10 minutes until the asparagus softens. Then drain them.

Prepare the Hollandaise sauce using the listed ingredients and the described method.

Place one bunch of cooked asparagus on each plate. Pour the prepared sauce over them and serve.
