Autumn Rice Bowl with Chicken
A colorful and nutritious bowl full of goodness that doesnt require much effort. It consists of brown rice, roasted vegetables, kale salad, chicken fillets, and a delicious dressing. A great idea for a healthy meal, suitable for lunch or dinner.

Steps

Preheat the oven to 220 degrees Celsius. Line a baking tray with parchment paper.

Halve the Brussels sprouts, slice the onion, and cut the sweet potato into smaller cubes. Drizzle the vegetables with olive oil, season with salt, and mix with thyme. Spread them on the baking tray and roast for 25 to 30 minutes.

Rinse the rice under running water and drain it. In a pot, melt the butter and sauté the rice, then add water, salt, and cook according to the instructions on the package.

For the dressing, finely chop the shallot and mix it with all the other ingredients.

Remove the stems from the kale and chop it finely. Dry roast the almond slices in a pan until lightly browned. Mix both with a third of the dressing and Parmesan shavings.

Season the chicken fillets with salt, pepper, garlic powder, and paprika. Pan-fry them in olive oil until nicely browned.

Divide the cooked rice among four bowls, arrange the roasted vegetables on one side, the kale salad on the other, and place the sliced chicken fillets in the center. Drizzle with the remaining dressing and serve the prepared dish.
