Bacon and Guacamole Stuffed Eggs
Tired of the classic deviled eggs and looking for something to spice up your table? Add avocado, cilantro, finely chopped red onion, and a pinch or two of ground chili to the filling, and sprinkle crispy bacon pieces over the stuffed eggs at the end. A true feast for the eyes and stomach!

Ingredients

6 pieces Egg, fresh

1 teaspoon Oil, vegetable oil, canola

3 slices Meat, pork, smoked bacon

1 piece Avocado, fresh

1.5 spoons Onion, raw

1 spoon Juice, lime

1 spoon Coriander, leaves, fresh

Steps

Carefully place the eggs in a pot and cover them with enough cold water (the water should completely cover the eggs). Lightly salt the water, place the pot on the stove, and bring the water to a boil.

As soon as the water boils, remove the pot from the heat. Let the eggs sit in the hot water for 8 minutes, then place the pot under cold running water and let the eggs cool down.

Heat a teaspoon of oil in a pan. Fry the bacon slices until crispy in the heated oil. Drain the cooked bacon well on paper towels, then crumble or chop it into small pieces.

Peel the cooled eggs and cut them in half. In a bowl, add the avocado flesh and mash it well with a fork. Add the crumbled egg yolks, finely chopped onion, cilantro, lime juice, and half of the bacon. Mix well and season with pepper, salt, and chili to taste. Fill the egg halves with the prepared filling.

Arrange the stuffed eggs on a nice plate or platter. Garnish them with the reserved bacon and serve the prepared snack.
