Bacon-Wrapped Pork Roast with Mediterranean Stuffing

600 g Meat, pork, shoulder

3 pods Garlic, fresh

6 pieces Tomato, dried

10 pieces Olives, green, in brine

2 spoons Cheese, Parmesan, grated

150 g Meat, pork, smoked bacon

1 spoon Oil, vegetable oil, canola
Steps

Clean the pork meat if necessary, wash it, and dry it well with paper towels. Peel the garlic, and separately chop the sun-dried tomatoes, pitted olives, and basil.

In a bowl, mix the tomatoes, olives, half of the garlic, basil, Parmesan, a pinch of salt, and pepper. Place the meat on a cutting board and make 2 to 3 cm deep parallel cuts on the top side, which you then fill with the prepared mixture. Lightly season the meat with salt and pepper on all sides and rub it with the remaining garlic.

Preheat the oven to 220 degrees Celsius. Wrap the seasoned meat with bacon slices, tie it with kitchen twine, and place it in a lightly oiled baking dish. Roast the meat in the preheated oven for 10 minutes, then reduce the temperature to 180 degrees Celsius, cover the dish (with a lid or aluminum foil), and continue roasting until the internal temperature reaches 65 to 70 degrees (30 to 40 minutes). During roasting, baste it several times with the juices that have collected in the dish, and uncover the dish for the last few minutes of baking to allow the bacon to become crispy.

Remove the roast from the oven, transfer it to a cutting board, and let it rest for 10 minutes before slicing. Serve the sliced meat with roasted potatoes and/or vegetables and a salad.
