Steps

Preheat the oven to 230 degrees Celsius. Lightly grease a baking dish with oil. Wash the eggplants and dry them thoroughly with a kitchen towel. Place them on the baking dish and bake in the preheated oven for about 30 minutes, until they are completely softened.

Remove the baked eggplants from the oven and let them cool. Once cooled, peel the eggplants and roughly mash the flesh with a fork.

Peel and finely chop the onion and garlic. Wash the tomatoes, clean them, and cut them into small pieces. Wash the chili and finely chop it. Remove the seeds if desired.

Heat oil in a large pan. Add the chopped onion to the pan and sauté until softened. Add the tomato, chopped chili, and chopped garlic, stir, cover the pan, and cook over moderate heat until the tomato pieces break down. Stir occasionally while cooking.

Then mix all the powdered spices into the vegetables. Cook for 1 minute, then add the mashed eggplants. Season with salt to taste and cook for another 5 minutes.

Serve the prepared dish in bowls and offer it with naan.

Advice
