Baked Anchovies
Anchovies are a small package of health. They contain easily digestible proteins, a variety of vitamins and minerals, and omega-3 fatty acids. The best part is that preparation is very simple.

Ingredients

1 kg Fish, anchovies, fresh

1 teaspoon Salt, table

150 g Wheat flour, white, multi-purpose

0.5 dl Oil, olive

1 piece Lemon, fresh, without shell
Steps

Rinse the anchovies under water and dry them thoroughly with paper towels.

Salt the fish and coat them in flour, then prepare a pan with olive oil and heat it. Be careful not to let the oil start smoking!

Place the anchovies in the pan and fry them on both sides until golden brown.

Drain the cooked fish on a paper towel and drizzle with lemon juice. Serve with various side dishes.

Advice
If desired, you can sprinkle the anchovies with rosemary while baking. Smaller anchovies do not need to have their innards removed (as they will cook through), but larger ones (sardines) require this step. The flavor can also be enhanced by slicing them, removing the backbone, and stuffing them with a slice of cheese and/or a thin slice of ham, then breading them. As a side dish, you can serve potato wedges, fresh bread, or a seasonal salad.
