Baked Avocado with Egg and Smoked Salmon

Preheat the oven to 180 degrees Celsius. Cut the avocados in half and remove the pit with a spoon, scooping out a little bit of the flesh to create a cavity that will fit the egg.

Place the avocado halves in a baking dish with the cut side facing up. Line the cavities with slices of smoked salmon, then carefully crack an egg into each one. Lightly season with salt and pepper. Place the baking dish in the preheated oven for 12 to 15 minutes.

Serve the baked avocado halves on plates. If serving for breakfast, accompany with slices of bread. For lunch, add a large bowl of seasonal salad on the side.
