Baked Cauliflower in Cheese Sauce

Ingredients

1 piece Cauliflower, fresh

40 g Butter, unsalted

2 spoons Flour, Wheat, bread flour

750 ml Milk, partially skimmed

Steps

Wash the cauliflower and separate it into individual florets.

Bring lightly salted water to a boil in a pot and blanch the cauliflower florets for 3 minutes, then drain them.

Prepare the béchamel sauce. In a thick-bottomed saucepan, melt the butter over medium heat. As soon as the butter melts, add the flour to the saucepan and cook it for 1-2 minutes, stirring constantly, until it turns light golden brown. Slowly start pouring the milk into the saucepan. It's best to pour it directly into the center of the saucepan while continuously whisking with a hand whisk to prevent lumps from forming.

Once all the milk is added, bring the sauce to a boil, then simmer it slowly for 10–15 minutes. Stir occasionally, especially along the bottom and sides of the saucepan, and be careful not to let it burn. As it begins to thicken, add salt, pepper, nutmeg, and 110g of grated cheese. Stir until all the cheese is melted, then remove the saucepan from the heat.

Preheat the oven to 180°C (350°F). Grease a baking dish with butter, then add the blanched cauliflower florets and pour the cheese sauce over them. Cover the dish with aluminum foil and place it in the preheated oven for 20 minutes.

After 20 minutes of baking, increase the temperature to 200°C (400°F) and remove the foil. Sprinkle the remaining grated cheese over the cauliflower. Let the dish bake in the heated oven for another 10-15 minutes, or until the cheese is melted and golden brown.
